SUGAR CANE SUGAR



MATOKE  =  mashed plantains 

(staple food of Uganda)

now that the mystery has been solved......

Matoke and plantains are the same thing--
treated as a potato and a staple in many areas such as UGANDA.  

There are many recipes on line also..... but when we were in Uganda the only way I ever noticed it was hot mashed and sometimes wrapped in a banana leaf.   Knowing that it is thought of and served much like our potato really helps me.  I think I finally "got it".   







Coffee Beans grow on trees....  they are actually coffee berries.......









Bananas and Matoke look very much the same as far as I know...... so this is one or the other.. growing on a banana or matoke tree.......



The salesman said this was the easiest adapter available.....  I don't think so!!

This baby gorilla might live somewhere in Africa.  The photographer may have been traveling over there when he saw this wonderful creature.  I have no way of knowing but this photo belongs on this blog.  He is such a beautiful baby.

While on the bus traveling to Kanungu, you have an opportunity to see so many things. As you look out of the window on the journey, you realize that the people have a simple life.  At first it seems so difficult and my heart even broke for how hard their lives seem. You see so many people traveling with food and baskets and water jugs on these long dirt mountain roads.  Somewhere along the way it sinks in, and you realize that their lives are the ones to be envied.  They have true needs such as fresh water and nutritional education, but they are rich in many things that we in America have long lost.
